Quit Staring at My [Burger] Buns!

Happy 4th of July, everyone! Last night we decided we were craving the classic Fourth-Food: BURGERS. Of course the most paleo/Whole30 of ways to have a great burger is to put your organic, grass-fed meat on a “green bun” (lots of lettuce leaves) and load up on your favorite healthy fixings: tomato, onion, pickle, mushrooms, egg, mustard … whatever your little heart desires. I, however, love my burger on a bun. I’m sorry, I know it’s not paleo, but I love me some bread-y, carb-y goodness with my meat. What’s a grain-free girl to do?

SCOUR THE INTERNET, that’s what! Pinterest has become my very best friend over the last six months, and one of my most recent discoveries was the 3 Ingredient Plantain Sandwich Rounds from Delicious Obsessions. Let’s just say I can now vouch for the name of her blog. These things are fantastic, super easy, and TOTALLY PALEO! WAHOO! Making them aesthetically pleasing is my next task, but the flavor and consistency are there; both were given a stamp of approval from my recipe guinea pig / assistant photographer, Denton. Out of respect for my fellow blogger, I won’t repost her recipe here, but ask that you visit her site for one of the easiest “bread” recipes I’ve come across {and prettier pictures than mine}!

I quickly mixed the sandwich “dough” together and busted out the new Lodge Seasoned Cast Iron Reversible Griddle/Grill to grill up some perfect burgers. It was the quickest and tastiest dinner we’ve had in a few weeks:

  1. Preheat oven, pop all ingredients for buns in a food processor and spoon onto parchment-lined cookie sheet.
  2. Preheat the grill pan, season your meat with a little olive oil/salt/pepper, and grill up you perfectly formed patties.
  3. While burgers are cooking on first side, you should have enough time to slice up a couple tomatoes and half an onion.

Seriously, three-step dinner? I’ll take that any day of the week. If you’re bored to tears and need more work, I suppose you can get fancy and make some Sweet Potato or Yucca Fries to go on the side – I was happy with just a burger and he was happy with two.
